Artisan Baking Workshop by Peter Wegmann Camrose Composite High School (Alberta) 17th October 2009 Peter Wegmann was trained in Germany where he completed an apprenticeship in baking and Pastry. Peter began his apprenticeship in the European tradition at the age of 16 and has been a baker for 22 years. It is timely that Peter will work with the Alberta Chef Educators Association as his skill and product knowledge will benefit many students who are emerging into this quickly developing popular and profitable market. Peter enjoys working and sharing his obvious passion with Artisan breads, Wholegrain breads, Viennoiserie and Pastry. Peter studied the science of baking at AIB in the USA. Peter worked in the USA with a Meat –Pie company who relocated him in Canada to be a manager of one of their HACCP certified plants. Peter was recruited by, Sunterra Markets in the year 2000. There he has developed and promoted their Artisan Baking Program. His production bakeries in Calgary are efficient and professional reflecting the qualities of Peter Wegman as a leader in Artisan Bread production in Alberta and beyond. Peter is no stranger to education having been a guest instructor at the Southern Alberta Institute of Technology (SAIT) on several occasions. Peter has a sound knowledge of the science of baking products and techniques that he conceptualizes during his practical sessions. Peter recently taught Artisan Bread to members of the Calgary Immigration Society. Peter is active in promoting education, having just completed a two-year journey with World Skills as he was the Workshop Supervisor with the Pastry skill at the International Skills Competition that was held in Calgary in 2009. The Alberta Chef Educators Association are honored to have a person of Peter’s caliber presenting a workshop at the kitchen of Camrose Composite High School on Saturday 17th October from 9am to 4 pm approximately.
